Peanut Butter Soup


Today I am bringing you a recipe for Peanut Butter Soup.  Peanut Butter soup is very nutritious and  is inspired by groundnut stew, which is a traditional African dish.  It has a smooth and velvety texture and a very unique taste when it comes to soups.  My friend actually loves this soup and has it quite regularly.  When making this soup I recommend you use a heavy bottomed pan.  When using a light pan, this soup tends to stick.  Below you will find the recipe. 


Peanut Butter Soup


Ingredients

  • 2 medium onions, chopped
  • 1 garlic clove, crushed
  • 1 tbsp. vegetable oil (you can use olive oil if you wish)
  • 1 28-oz. can crushed tomatoes
  • 1 13 3/4-oz. can chicken broth
  • 4 cups water
  • 2 large yams, peeled and cubed
  • 1 cup creamy peanut butter
  • 1/4 tsp. cayenne pepper
  • 1/4 tsp. salt
  • 2 cups cooked chicken pieces (optional)
  • 1/2 cup crushed peanuts (optional)
  • sour cream (optional)




Instructions
  • In a large heavy bottomed pot, sauté the onions and garlic in the oil over medium heat for about 5 minutes before adding the tomatoes, chicken broth, water and yams. Cook over medium-low heat for about 25 minutes or until the yams are soft.
  • Stir in the peanut butter, cayenne pepper and salt.  Mix well.   Let cool for 30 minutes.
  • Puree the soup in a blender or food processor until smooth and creamy, pour it back into the pan and warm until hot. Sprinkle the soup with the cooked chicken,  crushed peanuts, or sour cream.
  •  Serves 6 to 8.
